Fresh Cranberry Butter Cookies

This whole holiday thing is just whirling by me!

I’m gripping onto any portion of The Santa Clause trilogy or shard of striped, curved candy that crosses my path with trembling, white knuckles.

My schedule is busier than it’s been all year and that’s without the Christmas festivities.

To help you get into the holiday spirit too, I’ve toyed around with the brightest red ingredient I could find, loaded it with sugar and spice and then plopped it onto as much butter as possible.


That certainly did the trick on my end!

Cranberry Cookie Recipe

These are wonderfully tart and sweet with a subtle background of orange and cinnamon.

The cookie part is perfection.  Crumbly, but not hard.  Rich and full of flavor.

I’ve been wondering how the heck to use fresh cranberries in a dessert recipe that feels holiday appropriate but that also satisfies the relentless sugar fiend housed within me.

I couldn’t find one, so I made my own.

Cranberry Christmas Cookie Recipe

Let’s face it.  Nobody wants to be smacked in the face with cranberries.

They could really hurt depending on the velocity upon impact.

And also their tart disposition is just too overwhelming if not tamed with enough sweetness.

These are a great fit visually for the season and will certainly hold their own at any dessert table.  My preference is actually in the morning with coffee.

Don’t forget that it totally helps to play the best “The Santa Clause” movie in the background while baking these.

(We are all thinking of the second one, right?)

Christmas Butter Cookie Recipe

Fresh Cranberry Butter Cookies

Cranberry Filling

  • 2 C fresh cranberries
  • 1/2 C water
  • 1/2 tsp fine orange zest
  • 3/4 C sugar
  • 1/2 tsp vanilla
  • pinch fine sea salt
  • pinch cinnamon
  • 1 tsp butter

Cook first four ingredients over med-med hi heat while constantly stirring until thick and can pile up easily while stirring, about 10 minutes.  Remove from heat and add vanilla, salt, cinnamon and butter.  Stir to combine and then store in the fridge until use.  NOTE:  This recipe will make enough to fill a double batch of the cookies below.  I made one batch of cookies and refrigerated the remaining cranberry filling until I made the next batch a couple days later.

Cookie Base

Base recipe adapted from Is That My Bureka and my own butter cookie recipe

  • 1/2 C butter, soft but still firm
  • 1/4 C sugar
  • 1  1/4 C flour
  • 1/8 tsp fine sea salt
  • 1/8 tsp cinnamon
  • 1/2 tsp vanilla
  • 1/8 tsp baking powder

Using the paddle attachment of a mixer, blend sugar and butter until combined, but do not whip.  Stir in vanilla.  Separately, whisk together the flour, salt, cinnamon and baking powder.  Add this to the butter mixture and stir to combine.  Divide dough in half and form each half into a narrow, flat-topped log about 10 in long and 1 in wide.  Gently use your finger to press the center of the logs down halfway to the bottom while maintaining an edge of cookie on all sides.  Fill each with 1/4 C of cranberry filling then bake on parchment paper or a Silpat mat until the edges look golden brown, about 13-16 min.  Allow to cool completely on the cookie pan then drizzle with icing and slice.  **These cookies are basically filled with a homemade cranberry jam.  So if cranberry isn’t your thing, I feel that any thick, canned jam would work here too so go for it because this cookie base is killer!

High Altitude Butter Cookie Recipe adjustments made:  Same as above, but only use 3  1/2 T sugar and half the baking powder (which is a very tiny amount).  Procedure and times are the same.

Vanilla Icing Drizzle 

  • 1/2 C powdered sugar
  • 1/4 tsp vanilla
  • pinch fine sea salt
  • 1/4 tsp corn syrup
  • 2 T heavy whipping cream

Whisk all ingredients together until combined.  Drizzle over cool cookies before slicing.  Enjoy!
